Our pulled Chicken is made from our smoked chicken quarters which include the thigh and leg of the bird. We tightly wrap the skin around the quarter creating a jacket to keep the moisture in the meat. This part of the chicken contains a bit more fat but also contains a lot more flavor. Wu Tang Wings start with fresh jumbo wings. We smoke them for around an hour on a Cherry wood influenced hardwood blend. Right before finishing, we pull them off the smoker and let them rest to help retain their moisture. Lastly, we flash fry them - finishing off the cooking process and crisping up the skin. We then sauce the wings with our spiced up homemade yellow sauce.
